Method

For the Blackened Mahi Mahi

    Prepare the Mahi Mahi

    Pat the mahi mahi fillets dry with paper towels. Rub the blackening spice blend generously over both sides of each fillet. Season with salt and pepper.

    Cook the Mahi Mahi

    In a large skillet, heat olive oil over medium-high heat. Once hot, place the seasoned fillets in the skillet and cook for about 3-4 minutes on each side, until the fish is cooked through and has a charred crust. Remove from the skillet and set aside.

For the Chorizo & Corn Hash

    Cook the Chorizo

    In the same skillet used for the fish, add chorizo and cook over medium heat until browned and crispy, about 5-7 minutes. Remove from skillet and drain excess fat.

    Sauté the Vegetables

    In the same skillet, add olive oil. Sauté the diced red bell pepper and red onion until soft, about 3-4 minutes. Add corn, cooked chorizo, salt, and pepper, and cook for another 2-3 minutes until heated through.

    Finish the Hash

    Stir in chopped cilantro, mix well, and remove from heat.

For the Creamy Mashed Potatoes

    Prepare the Potatoes

    Peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add salt and bring to a boil.

    Make the Mashed Potatoes

    Cook potatoes until fork-tender, about 15-20 minutes. Drain and return to pot. Add butter, heavy cream, salt, and pepper. Mash until creamy and smooth.

For the Salsacado

    Mix the Salsacado

    In a bowl, combine diced avocado, tomato, red onion, lime juice, and cilantro. Season with salt to taste and mix gently.
