    Prepare the Marinade

    In a large bowl, combine the cubed beef, white vinegar, minced garlic, minced ginger, turmeric powder, red chili powder, cumin powder, coriander powder, salt, and black pepper. Mix everything thoroughly to ensure the beef is well-coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, preferably overnight for better flavor.

    Sauté the Onions

    In a large pot or Dutch oven, heat the vegetable or mustard oil over medium heat. Once hot, add the finely chopped onions and sauté until they are golden brown, about 8-10 minutes.

    Cook the Beef

    Add the marinated beef to the pot with the sautéed onions. Cook on medium-high heat, stirring frequently, until the beef is browned on all sides, about 5-7 minutes.

    Add Pureed Tomatoes

    Stir in the pureed tomatoes and cook for another 5 minutes until the mixture is well combined and the oil starts to separate.

    Simmer the Vindaloo

    Pour in the water and add the sugar. Stir well, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.

    Garnish and Serve

    Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh cilantro, alongside rice or naan.
