Method

Preparing the Plums

    Compress the Plums

    Slice the plums in half and remove the pits. Place them in a vacuum-seal bag and vacuum-seal until compressed. If you don’t have a vacuum sealer, you can place them in a heavy dish and press down with another dish to compress.

Making Burnt Honey

    Prepare Burnt Honey

    In a small saucepan, heat honey over medium heat. Continue to heat until the honey reaches a dark amber color, stirring occasionally to prevent burning. Once darkened, remove from heat and let cool slightly.

Candied Serrano

    Candy the Serrano Peppers

    In a saucepan, combine sugar and water. Bring to a boil until sugar dissolves. Add sliced serrano peppers and simmer on low for about 10-15 minutes until the peppers become translucent. Remove from syrup and let cool on parchment paper.

Assembly

    Plate the Dish

    On a serving plate, arrange the compressed plums. Drizzle with burnt honey, sprinkle candied serrano peppers, and finish with chopped pistachios for garnish.
