Green Chickpea Bissara

Method

Brioche Preparation

Activate Yeast

In a small bowl, combine warm milk, sugar, and active dry yeast. Let sit for about 10 minutes until foamy.

Mix Ingredients

In a large mixing bowl, combine flour and salt. Create a well in the center and add the yeast mixture and eggs. Mix until a dough forms.

Knead Dough

Knead the dough on a floured surface for about 10 minutes until smooth. Incorporate butter little by little while kneading.

First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Shape and Second Rise

Punch down the dough and shape it into a loaf or rolls. Place in a greased pan, cover, and let rise again for about 30-45 minutes.

Bake

Preheat the oven to 375°F (190°C). Bake the brioche for 25-30 minutes until golden brown. Let cool before serving.

Green Chickpea Bissara Preparation

Cook Chickpeas

In a saucepan, combine green chickpeas, water, and salt. Bring to a boil, then simmer until chickpeas are tender, about 30-40 minutes.

Blend Bissara

Add cooked chickpeas, garlic, cumin, and olive oil to a blender. Blend until smooth, adding more water if necessary to reach desired consistency.

Assembly

Serve

Slice the brioche and serve it warm with a generous spoonful of green chickpea bissara on the side. Drizzle with new harvest olive oil and garnish with fresh parsley.
