Prepare the Marinade

In a small bowl, mix together the miso paste, chopped preserved lemon, honey, and sesame oil until well combined. Set aside.

Season the Fish

Pat the Tai Snapper fillets dry with a paper towel. Season both sides with salt and black pepper.

Cooking

Sear the Fish

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the snapper fillets and sear for about 3-4 minutes on each side or until cooked through and golden brown. Remove from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced cremini mushrooms and sauté for about 5 minutes, until they are tender. Add the diced green tomatoes and cook for an additional 2-3 minutes until softened.

Combine and Serve

Return the snapper to the skillet with the vegetables, and pour the miso marinade over the top. Allow it to cook for an additional minute to heat through. Serve immediately.
