Method

Prepare the Bavarois

Soften Gelatin

Soak the gelatin sheets in cold water for about 5 minutes until softened.

Cook Mulberries

In a saucepan, combine mulberries and sugar over medium heat. Cook until the mulberries break down and the mixture thickens, about 10 minutes. Remove from heat.

Combine Gelatin

Remove the gelatin from the water and squeeze out excess liquid. Stir the gelatin into the warm mulberry mixture until fully dissolved.

Whip Cream

In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mulberry mixture.

Add Flavor

Stir in vanilla extract and lemon juice. Mix until just combined.

Chill

Pour the mixture into serving molds or glasses and refrigerate for at least 4 hours or until set.

Prepare the Fruit

Wash and Prepare Fruits

Wash all the berries thoroughly. Slice the kiwi into rounds.

Arrange Fruit

Once the bavarois is set, arrange the strawberries, blueberries, kiwi, and raspberries on top of the bavarois or on the side as a fresh fruit accompaniment.
