Wine Making Process

Harvesting

Select ripe Limniona grapes from the vineyards in Tirnavos, Thessaly. Ensure that the grapes are free from any rot or damage.

Crushing

Crush the harvested grapes to extract the juice. This can be done by hand or using a grape crusher.

Fermentation

Transfer the grape juice into a fermentation vessel. Add the yeast and sulfites to the juice, and stir well. Allow the mixture to ferment at a controlled temperature for about 10-14 days.

Pressing

After fermentation, press the mixture to separate the liquid wine from the grape skins. Collect the wine in a clean container.

Clarification

Allow the wine to settle for a few days. You may use fining agents if desired to help clarify the wine.

Bottling

Once clarified, transfer the wine into sterilized bottles and cork them. Store the bottles in a cool, dark place to age.

Aging

Let the wine age for at least 6 months before tasting to develop its flavors.
