Method
Winemaking Process

Harvesting Grapes
Carefully hand-pick ripe Chardonnay and Pinot Noir grapes from the vineyards in San Benito, California.

Pressing
Grapes should be gently pressed to extract the juice while minimizing skin contact.

Fermentation
Transfer the juice to fermentation tanks and add yeast to initiate fermentation. Maintain a temperature of around 18-20°C for about 3 weeks.

Secondary Fermentation
After primary fermentation, blend the Chardonnay and Pinot Noir juices. Bottle the wine with some yeast and sugar to initiate secondary fermentation in the bottle.

Aging
Allow the wine to age in the bottle for a minimum of 12 months to develop complexity and bubbles.

Riddling
Slowly rotate the bottles to collect sediment in the neck of the bottle.

Disgorgement
Remove the sediment by freezing the neck of the bottle and ejecting the frozen plug.

Dosage
Add a mixture of sugar and wine to the bottle to balance acidity before corking.

Corking
Cork the bottles and secure them for storage.
