Preparation

  1. 1

    Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash the potatoes and cut them into small cubes (about 1-inch pieces).

  2. 2

    Season the Potatoes

In a bowl, toss the cubed potatoes with olive oil, salt, and black pepper until evenly coated.

  3. 3

    Roast the Potatoes

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through.

  4. 4

    Cook the Eggs

While the potatoes are roasting, crack the eggs into a non-stick skillet over medium heat. Cook to your desired doneness (sunny side up, over easy, etc.) and season with salt and pepper.

  5. 5

    Toast the Bread

While the eggs are cooking, toast the whole wheat bread slices in a toaster or on a skillet until golden brown.

  6. 6

    Plate the Dish

Once the potatoes are roasted and eggs are cooked, plate the eggs alongside the roasted potatoes and serve with the toasted whole wheat bread.
