Prepare the Ingredients
Start by prepping all the ingredients. Dice the firm tofu into small cubes, chop the onion, bell pepper, and tomatoes into bite-sized pieces. Peel and dice the potatoes, and slice the mushrooms. Mince the garlic cloves.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Incorporate Spinach and Tomatoes
Add the fresh spinach and chopped tomatoes to the skillet. Stir everything together and cook for an additional 3-4 minutes, just until the spinach wilts.

While the hash is cooking, toast the whole wheat bread slices in a toaster or on a skillet until golden brown.
