Begin by tapping mature sugar maple trees in late winter or early spring when temperatures fluctuate above and below freezing. Use a drill to create a small hole in the tree's trunk and insert a spile to allow the sap to flow into a collection bucket.

Once you have collected approximately 40 liters of maple sap, transport it to a suitable outdoor boiling setup. Pour the sap into a large, flat pan and begin boiling over a heat source. Maintain a steady boil to evaporate the water content, concentrating the syrup.

As the sap boils, use a thermometer to monitor the temperature. Maple syrup is ready when it reaches a temperature of 104°C (219°F). This process may take several hours, so be patient and keep the sap boiling.
