    Prepare the Pie Crust

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

    Cut in Butter

    Add the unsalted butter, cut into small cubes. Use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Pie Filling

    Prepare the Filling

    In a large bowl, combine the fresh fruit, granulated sugar, cornstarch, ground cinnamon, and lemon juice. Stir gently to coat the fruit evenly.

    Preheat Oven

    While the filling rests, preheat your oven to 425°F (220°C).

    Roll Out Dough

    On a floured surface, roll out the chilled dough to fit your pie dish. Place the rolled dough into the dish and trim any excess hanging over the edges.

    Add Filling and Bake

    Pour the fruit filling into the prepared pie crust, dot with butter, and cover with a second layer of crust if desired. Cut slits for ventilation. Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly.

    Cool and Serve

    Allow the pie to cool for at least 30 minutes before slicing. Serve warm or at room temperature.
