Migas Base

    Prepare the Base

    In a large skillet over medium heat, add a splash of oil. Once hot, sauté the diced onion and bell pepper until softened, about 5 minutes.

    Add Tortilla Strips

    Add the corn tortilla strips to the skillet and cook until they begin to crisp, about 3-4 minutes.

    Incorporate Cheese

    Sprinkle the shredded jack cheese over the mixture and stir until melted, about 2 minutes.

    Garnish

    Remove from heat and sprinkle with chopped green onions.

Chipotle Sour Cream

    Prepare Chipotle Sour Cream

    In a small bowl, combine the sour cream and minced chipotle in adobo sauce. Mix well and set aside.

Housemade Salsa

    Make Salsa

    In a medium bowl, combine diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to meld flavors.

Roasted Potatoes

    Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, paprika, salt, and pepper in a baking dish. Roast for 25-30 minutes or until golden brown and crispy, stirring halfway through.

Whole Wheat Toast

    While the potatoes are roasting, toast the whole wheat bread slices until golden brown.
