Soups & Salads

Method

Soups & Salads

  1. 1

    Prepare the Chicken

Marinate the chicken breast in olive oil, lime juice, honey, salt, and black pepper for at least 30 minutes.

  2. 2

    Grill the Chicken

Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing.

  3. 3

    Prepare the Vegetables

While the chicken is grilling, chop the romaine lettuce into bite-sized pieces. Dice the tomato, thinly slice the red onion, and slice the avocado.

  4. 4

    Make the Salad

In a large bowl, combine the chopped romaine, diced tomato, sliced red onion, sliced avocado, and shredded cheddar cheese.

  5. 5

    Add Chicken and Tortilla Strips

Once the chicken has rested and is sliced, add it to the salad along with the crispy tortilla strips.

  6. 6

    Dress the Salad

Drizzle the honey-lime vinaigrette over the salad and toss gently to combine all ingredients.

  7. 7

    Serve

Divide the salad among serving plates and enjoy your refreshing Mexican Chopped Salad!
