Cook the Pasta
In a large pot of boiling salted water, add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Roux
In the same pot, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour, stirring continuously for about 2-3 minutes until it forms a paste and turns light golden brown.

Add the Milk
Slowly whisk in the milk, ensuring no lumps form. Continue to stir for about 5-7 minutes until the mixture thickens and starts to bubble.

Mix in the Cheeses
Remove the pot from heat and stir in the shredded cheddar cheese and grated parmesan cheese until melted and smooth. Season with salt, black pepper, and paprika.

Combine with Pasta
Add the cooked elbow macaroni to the cheese sauce, stirring until the pasta is evenly coated.

Prepare for Baking
Preheat the oven to 350°F (175°C). Transfer the macaroni and cheese to a greased baking dish. Sprinkle the breadcrumbs evenly over the top.

Bake
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crispy.

Remove from the oven, let cool for a few minutes, then sprinkle with chopped fresh parsley before serving.
