House-Curing the Salmon

Prepare the Cure
In a bowl, mix together the kosher salt, brown sugar, and crushed black peppercorns.

Cure the Salmon
Place the salmon fillet skin-side down in a shallow dish. Spread the cure mixture over the salmon, making sure to cover it completely. Top with fresh dill sprigs.

Wrap and Refrigerate
Cover the dish tightly with plastic wrap and refrigerate for 48 hours, turning the salmon halfway through the curing process.

Rinse and Slice
After 48 hours, remove the salmon from the cure and rinse it under cold water. Pat dry with paper towels and slice thinly.

Mix the Ingredients
In a mixing bowl, combine the cream cheese, chopped fresh chives, and lemon juice.

Using a fork or hand mixer, blend the ingredients until smooth and well combined.
Assembly

Thinly slice the red onion and tomatoes.

Toast the bagels until golden brown.
