Prepare the Potatoes

Caramelize the Onions and Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the fat in the pan. Add sliced onion to the pan and cook, stirring occasionally, until caramelized (about 15 minutes). Once cooked, chop the bacon into pieces and add to the skillet with the onions.

Toast the Bread
While the frittata is baking, toast the slices of whole wheat bread until golden brown.

Serve
Once the frittata is done, remove it from the oven and let it cool for a couple of minutes. Serve it on the toasted bread with a dollop of sour cream on top, alongside the roasted potatoes.
