Preheat the Oven
Preheat your oven to 375°F (190°C) to get ready for baking the frittata.

Sauté Vegetables
In a medium-sized oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic (2 cloves) and sauté for about 1 minute until fragrant. Then add 2 cups of fresh spinach and cook until wilted.

Add Tomatoes and Olives
Stir in 1 cup of halved cherry tomatoes and 1 cup of pitted and sliced Kalamata olives. Cook for an additional 2-3 minutes until the tomatoes are slightly softened.

Combine Ingredients
Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to combine, then crumble 1 cup of feta cheese on top.

Toast the Bread
While the frittata is baking, toast the 2 slices of whole wheat bread until golden brown.

Serve
Once the frittata is done, remove it from the oven and let it cool for a couple of minutes. Slice into wedges and serve warm alongside the toasted whole wheat bread and roasted potatoes.
