Preparation Steps

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C) to get ready for baking the frittata.

  2. 2

    Prepare the Potatoes

If you haven't prepared roasted potatoes yet, chop about 2 medium potatoes into small cubes, toss them in olive oil, salt, and pepper, and roast them in the oven for about 25-30 minutes or until golden brown.

  3. 3

    Sauté Vegetables

In a medium-sized oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic (2 cloves) and sauté for about 1 minute until fragrant. Then add 2 cups of fresh spinach and cook until wilted.

  4. 4

    Add Tomatoes and Olives

Stir in 1 cup of halved cherry tomatoes and 1 cup of pitted and sliced Kalamata olives. Cook for an additional 2-3 minutes until the tomatoes are slightly softened.

  5. 5

    Whisk Eggs

In a bowl, whisk together 3 whole eggs, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.

  6. 6

    Combine Ingredients

Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to combine, then crumble 1 cup of feta cheese on top.

  7. 7

    Bake the Frittata

Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the eggs are set and the top is lightly golden.

  8. 8

    Toast the Bread

While the frittata is baking, toast the 2 slices of whole wheat bread until golden brown.

  9. 9

    Serve

Once the frittata is done, remove it from the oven and let it cool for a couple of minutes. Slice into wedges and serve warm alongside the toasted whole wheat bread and roasted potatoes.
