Dough Ingredients

Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle the active dry yeast (2 tbsp) over the water and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix the Dough

In a large bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Make a well in the center and add the yeast mixture, milk (0.5 cups), and melted butter (2 tbsp). Stir until a sticky dough forms.

  3. 3

    Knead the Dough

Transfer the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

  5. 5

    Shape the Muffins

After the first rise, punch down the dough and turn it out onto a lightly floured surface. Roll it out to about 1 inch thick. Use a round cutter to cut out circles and place them onto cornmeal-dusted baking sheets.

  6. 6

    Second Rise

Cover the muffin rounds with a clean cloth and let them rise for another 30 minutes.

  7. 7

    Cook the Muffins

Preheat a griddle or skillet over medium heat. Cook the muffins for about 5-7 minutes on each side, or until golden brown. Make sure to adjust the heat if they are browning too quickly.

  8. 8

    Cool and Serve

Remove the muffins from the griddle and let them cool on a wire rack. Serve warm or toasted, with butter or your favorite spread.
