    Prepare the Chicken & Dumplings

    In a large pot, bring water to a boil and add the chicken. Cook for 30 minutes or until fully cooked. Remove the chicken, shred it, and set aside. In the same pot, add dumplings according to package instructions, typically boiling them for about 10 minutes.

    Make the Macaroni & Cheese

    In a separate pot, cook macaroni according to package instructions. Drain and set aside. In a saucepan, melt 2 tablespoons of olive oil, add 1 cup of cheddar cheese, and stir until melted. Combine with the cooked macaroni and season with salt and black pepper to taste.

    Prepare the Braised Pot Roast

    In a heavy pot, heat 2 tablespoons of olive oil over medium heat. Season the 2 pounds of pot roast with salt, pepper, and thyme. Sear the meat on all sides until browned, about 5-7 minutes. Remove the roast and add chopped onion and minced garlic, sautéing until fragrant.

    Braise the Pot Roast

    Return the pot roast to the pot, add 2 cups of beef broth and a bay leaf. Cover and reduce heat to low. Let it braise for 5 hours until tender, adding more broth if necessary.

    Make Mom’s Meatloaf

    In a bowl, combine 1 pound of ground beef, 1 cup of breadcrumbs, 1 beaten egg, and seasoning with salt and pepper. Mix well and shape into a loaf. Place in a baking dish and bake at 350°F (175°C) for 1 hour.
