    Prepare the Ingredients

    Peel and dice the potatoes into small cubes. Finely chop the onion and roughly chop the spinach. Cut the corned beef into small pieces.

    Cook the Potatoes

    In a large skillet over medium heat, add a splash of oil. Once hot, add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

    Add Onions and Corned Beef

    Add the chopped onion to the skillet with the potatoes and cook for another 3-4 minutes until the onion is translucent. Then, stir in the corned beef and cook for an additional 5 minutes until heated through.

    Incorporate Spinach

    Fold in the chopped spinach and cook for another 2-3 minutes until wilted. Adjust seasoning if necessary.

    Cook the Eggs

    In a separate non-stick skillet, fry the eggs to your liking (sunny-side up, over-easy, etc.). Season with salt and pepper.

    Toast the Bread

    While the eggs are cooking, toast the slices of whole wheat bread until golden brown.

    On a plate, serve a generous portion of the corned beef hash, top it with the cooked eggs, and serve with toasted bread on the side. Optionally, add horseradish cream for an extra kick.
