Method

Preparing the Salad Base

  1. 1

    Wash and Chop Romaine

Wash the romaine lettuce under cold water. Remove any wilted or damaged leaves. Pat dry and chop into bite-sized pieces.

  2. 2

    Grate Parmesan

Using a grater or a food processor, grate the Parmesan cheese and set aside.

Making the Garlic Croutons

  1. 3

    Prepare the Bread

Cut the bread into small cubes (about 1-inch) and place them in a bowl.

  2. 4

    Mix Garlic and Olive Oil

Mince the garlic cloves and combine in a small bowl with olive oil, salt, and black pepper.

  3. 5

    Toss and Bake Croutons

Drizzle the garlic oil mixture over the bread cubes and toss until evenly coated. Spread the cubes on a baking sheet and bake at 375°F (190°C) for about 10-12 minutes or until golden brown, turning halfway through.

Making the Dressing

  1. 6

    Combine Ingredients

In a mixing bowl, whisk together the egg yolk, Dijon mustard, Worcestershire sauce, lemon juice, and minced garlic until smooth.

  2. 7

    Emulsify Dressing

Slowly drizzle in the olive oil while whisking continuously until the dressing is thick and creamy. Season with salt and black pepper to taste.

Assembling the Salad

  1. 8

    Combine Ingredients

In a large salad bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and garlic croutons.

  2. 9

    Dress the Salad

Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

  3. 10

    Serve

Serve immediately, garnished with additional Parmesan cheese if desired.
