    In a large bowl, combine buttermilk, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

    Prepare the Breading

    In a shallow dish, place the all-purpose flour. Remove the chicken from the brine and let excess liquid drip off. Dredge each chicken breast in the flour, ensuring an even coating.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts, cooking for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute. Gradually add the milk, whisking continuously to prevent lumps. Cook until thickened, about 3-5 minutes. Season with salt and black pepper.

Smashed Potatoes
