Chicken Stew

    Prepare the Chicken

    In a large pot, heat the olive oil over medium heat. Add the whole chicken and brown it on all sides, about 5-7 minutes.

    Add Vegetables

    Chop the carrots, celery, and onion into bite-sized pieces. Mince the garlic. Add the vegetables and garlic to the pot and sauté for another 5 minutes.

    Add Broth and Seasoning

    Pour in the chicken broth and add the bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Stew

    Reduce the heat to low, cover the pot, and let it simmer for about 1 hour, or until the chicken is fully cooked and tender.

    Shred the Chicken

    Remove the chicken from the pot and let it cool slightly. Shred the chicken meat, discarding the bones and skin, and return the shredded chicken to the pot.

Dumplings

    Mix Dry Ingredients

    In a mixing bowl, combine the flour, baking powder, salt, and dried parsley.

    Add Wet Ingredients

    Melt the butter and let it cool slightly. Add the milk and melted butter to the dry ingredients, stirring until just combined.

    Form Dumplings

    Using a spoon, drop spoonfuls of the dumpling batter into the simmering stew, making sure they float on the surface.

    Cook Dumplings

    Cover the pot and let the dumplings steam in the stew for about 15 minutes. Do not lift the lid during this time.
