Make the Pastry Dough
In a large mixing bowl, combine the flour, salt, and granulated sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the cold water, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apple Filling
In a large bowl, combine the sliced apples, brown sugar, chopped walnuts, ground cinnamon, and lemon juice. Toss until the apples are evenly coated. Set aside to allow the flavors to meld.

Fill the Pie
Spoon the apple filling into the prepared pie crust, spreading it evenly. Roll out the second pastry disc and place it over the apples. Pinch the edges of the top and bottom crusts together to seal. Cut small slits in the top crust to allow steam to escape.

Bake the Pie
Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the apples are tender. If the edges of the crust brown too quickly, cover them with aluminum foil.

Cool and Serve
Remove the pie from the oven and allow it to cool for at least 15 minutes before slicing. Serve warm with house-made rum raisin ice cream and drizzle with caramel sauce.
