In a large mixing bowl, combine the Dungeness crab meat, green onions, celery, crumbled bacon, breadcrumbs, eggs, creole mustard, mayonnaise, Old Bay seasoning, salt, and black pepper. Mix gently until all ingredients are well incorporated.

Using your hands, form the crab mixture into patties about 3 inches in diameter and 1 inch thick. Place them on a baking sheet lined with parchment paper.

Cover the crab cakes with plastic wrap and refrigerate for at least 30 minutes to help them firm up.

In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.

Carefully place the chilled crab cakes in the hot oil, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
