Method

Appetizers

  1. 1

    Prep and preheat

Position a rack in the oven about 6 inches from the broiler. Preheat the broiler and line a baking sheet with parchment or foil.

  2. 2

    Make garlic butter sauce

In a small saucepan, melt butter with olive oil over medium heat. Add minced garlic and cook 1-2 minutes until fragrant and just lightly golden; do not burn.

  3. 3

    Add citrus and aromatics

Stir in dry white wine (or chicken broth), lemon juice, lemon zest, red pepper flakes, and a pinch of salt and pepper. Simmer 1-2 minutes to blend flavors.

  4. 4

    Season shrimp

Pat shrimp dry and season with a small pinch of salt and pepper.

  5. 5

    Arrange and baste

Spread shrimp in a single layer on the prepared sheet. Brush with some of the garlic butter sauce and reserve the remaining sauce for finishing.

  6. 6

    Broil

Broil 2-3 minutes, then flip shrimp, brush with the remaining sauce, and broil 1-2 minutes more until pink, opaque, and just cooked through.

  7. 7

    Finish and serve

Remove from oven, toss shrimp with remaining sauce and parsley. Transfer to a warm platter, garnish with lemon wedges and extra parsley, and serve immediately.
