Pork Chop Prep

Let the smoked pork chop rest at room temperature for 15 minutes to take the chill off.

Pat the chop dry with paper towels.

In a small bowl, combine salt (0.25 tsp), pepper (0.125 tsp), garlic powder (0.25 tsp), and smoked paprika (0.5 tsp). Rub this seasoning mix evenly over all sides of the chop.
Searing and Glazing

Sear the chop for 2-3 minutes per side, just until heated through and a light crust forms.

In a small bowl, whisk maple syrup (1 tbsp) with balsamic vinegar (1 tsp) to make a glaze.

During the last minute of searing, brush the glaze onto the chop. Allow it to caramelize slightly, turning once or twice to coat both sides.
Finish and Serve

Remove from heat and let rest for 2-3 minutes to redistribute juices.

Slice into medallions if desired and serve as an appetizer, optionally with any remaining glaze spooned over.
