    Prep oysters and station

    Pat oysters dry with paper towels. Set aside. Arrange three shallow bowls for dredging: one with seasoned flour, one with beaten eggs, and one with breadcrumbs.

    Season flour

    In a shallow dish, whisk together all-purpose flour, salt, black pepper, paprika, and garlic powder until well combined.

    Beat eggs

    Whisk eggs in a separate bowl until fully blended.

    Prepare breadcrumbs

    Place breadcrumbs (panko) in a third shallow bowl.

    Dredge oysters

    Dip each oyster in the seasoned flour, shake off excess, then dip into beaten eggs and coat with breadcrumbs. Repeat for all oysters.

    Heat oil

    Pour vegetable oil into a deep pot or fryer. Heat to 360-370°F (180-188°C). Maintain temperature between batches.

    Fry oysters

    Fry oysters in batches for 2-3 minutes until golden and crisp. Remove with a slotted spoon and drain on paper towels.

    Serve with sauce

    Arrange fried oysters on a platter and serve immediately with cocktail sauce on the side.

    Make cocktail sauce

    In a small bowl, whisk together ketchup, prepared horseradish, lemon juice, Worcestershire sauce, hot sauce, and a pinch of salt until smooth.
