Chocolate ganache topping

Method

Cake batter

  1. 1

    Preheat and prepare

Preheat oven to 350F (175C). Grease and flour a 9-inch round cake pan and line with parchment if desired.

  2. 2

    Whisk dry ingredients

In a large bowl, whisk together flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well blended.

  3. 3

    Whisk wet ingredients

In a separate bowl, whisk eggs, milk, vegetable oil, and vanilla extract until smooth.

  4. 4

    Combine and add water

Add the wet ingredients to the dry ingredients and mix until just combined. Gradually stir in hot water until the batter is smooth and thin.

  5. 5

    Bake the cake

Pour batter into prepared pan and bake for 28-32 minutes, or until a toothpick inserted near the center comes out with moist crumbs.

  6. 6

    Cool

Let cake cool in the pan for 10 minutes, then invert onto a rack to cool completely before handling.

Fudge center filling

  1. 7

    Prepare fudge center

In a small saucepan over low heat, combine heavy cream and butter. Heat until butter melts and the mixture is warm but not boiling.

  2. 8

    Melt chocolate and flavor

Remove from heat and stir in dark chocolate chips until smooth. Stir in vanilla extract and salt until well combined.

  3. 9

    Set fudge filling

Allow the fudge mixture to cool until thickened to a spreadable consistency, about 20-30 minutes. If needed, refrigerate briefly to speed thickening.

Chocolate ganache topping

  1. 10

    Make ganache

In a heatproof bowl, place the ganache chocolate chips. Heat the heavy cream just to a simmer and pour over the chips; let stand 2-3 minutes, then whisk until smooth.

  2. 11

    Finish cake

Once the cake is cooled, use a round cutter to remove a central core about 2 inches in diameter to create a cavity. Spoon the thick fudge filling into the cavity and press the core back in place. Pour ganache over the top, allowing it to cascade down the sides. Chill briefly to set before slicing.
