    Preparation

    Remove the ribeye steak from the refrigerator and pat dry with paper towels. Let it come to room temperature for 15-20 minutes before grilling.

    Preheat the grill

    Preheat a grill to high heat (about 450-500°F / 230-260°C). If using a grill grate, oil the grates lightly to prevent sticking.

    Season the steak

    Brush both sides of the steak with a thin coating of neutral oil. Season evenly with kosher salt and freshly ground black pepper on all sides.

    Sear on the grill

    Place the steak on the hot grill and sear without moving for 3-4 minutes to develop a crust. Flip and sear the other side for 3-4 minutes.

    Check doneness and rest

    Check for desired doneness (target 130-135°F / 54-57°C for medium-rare). Remove the steak to a cutting board and tent loosely with foil to rest for 5-10 minutes.

    Add steak sauce

    If desired, warm or brush 1-2 tablespoons of steak sauce onto the steak during the final minutes of resting or serve sauce on the side.

    Serve

    Slice the steak if desired and plate. Serve while warm as an appetizer with extra sauce on the side.
