    Prep and station setup

    Set out three shallow bowls: one with the seasoned flour for dredging, one with the beer batter, and one with breadcrumbs. Have a rack or paper towels ready for draining.

    Make dredging flour mixture

    In a large bowl, whisk together 1 cup flour, 1/2 cup cornstarch, 1 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, and 1/4 tsp black pepper until evenly combined.

    Prepare beer batter

    In a separate bowl, beat the egg. Whisk in 3/4 cup cold beer and 1/2 cup flour until a smooth batter forms.

    Set up breadcrumbs

    Place the breadcrumbs in a third shallow dish; they should be ready for coating after the batter step.

    Dredge the crab claws

    Dip each crab claw into the seasoned flour, shaking off excess to create a light dry coating.

    Batter the claws

    Dip floured claws into the beer batter, ensuring an even coating.

    Bread with breadcrumbs

    Roll the battered claws in breadcrumbs until fully coated and the crumbs adhere well.

    Heat oil

    Heat the vegetable oil in a heavy-bottomed pot or fryer to 350°F (175°C). Maintain the temperature between batches.

    Fry claws

    Carefully add batches of claws to the hot oil and fry for 2–3 minutes, until golden brown and crisp. Do not overcrowd the pot.

    Remove with a slotted spoon, drain on paper towels, and serve immediately with dipping sauces of choice.
