    Prepare poaching liquid

    In a small saucepan, combine 2 cups water and 0.5 tsp salt; bring to a gentle simmer.

    Poach the catfish

    Gently slip the catfish fillet into the simmering water and poach for 1–2 minutes until just opaque; remove with a slotted spoon and pat dry.

    Make lemon-butter baste

    In a separate saucepan, melt 2 tablespoons butter over low heat. Add 1 minced garlic clove, 2 tablespoons lemon juice, 1 teaspoon lemon zest, 0.25 teaspoon paprika, and 0.25 teaspoon Old Bay seasoning; stir briefly to blend flavors.

    Broil the fillet

    Preheat the broiler. Place the poached fillet on a broiler-safe pan. Brush with the lemon-butter mixture and broil 2–4 minutes until the edges are lightly browned and the fish is warmed through.

    Finish and garnish

    Baste once more with any remaining lemon-butter. Season with black pepper and a pinch of salt to taste, then garnish with chopped fresh parsley before serving.
