Method

Meringue Cookies

    Prepare the Oven

    Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.

    Beat Egg Whites

    In a clean, dry mixing bowl, beat the egg whites until soft peaks form.

    Add Sugar

    Gradually add the granulated sugar while continuing to beat until stiff peaks form and the mixture is glossy.

    Incorporate Other Ingredients

    Gently fold in the cornstarch, vinegar, and vanilla extract until just combined.

    Shape Meringues

    Spoon or pipe the meringue mixture onto the prepared baking sheet, creating circular discs or nests.

    Bake

    Bake for 1.5 to 2 hours, or until the meringues are dry and can be easily lifted from the parchment paper. Turn off the oven and leave them inside to cool completely.

Mango Coulis

    Blend Ingredients

    In a blender, combine the diced mango, sugar, and lime juice. Blend until smooth.

    Strain (Optional)

    For a smoother coulis, strain the mixture through a fine mesh sieve to remove any pulp.

    Chill the coulis in the refrigerator until ready to serve.

Coconut Jellies

    In a small bowl, sprinkle the gelatin over 1/4 cup of cold coconut milk and let it sit for 5 minutes to bloom.

    In a saucepan, heat the remaining coconut milk with sugar and vanilla extract until the sugar dissolves.

    Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.

    Pour the mixture into small molds or a shallow dish and refrigerate for at least 2 hours or until set.

Whipped Cream

    In a mixing bowl, beat the heavy cream (or coconut cream) until soft peaks form.

    Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.

    Keep the whipped cream chilled until ready to serve.

Berry Sauce

    In a saucepan, combine the mixed berries, sugar, and lemon juice over medium heat.

    Cook until the berries break down and the sauce thickens slightly, about 10 minutes.
