Steak Preparation

    Marinate the Skirt Steak

    In a bowl, mix olive oil, minced garlic, cumin, paprika, salt, black pepper, and lime juice. Add the skirt steak, ensuring it’s well coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Grill the Steak

    Preheat your grill to high heat. Remove the skirt steak from the marinade and grill for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Remove from the grill and let it rest for 5 minutes before slicing.

Patatas Bravas Preparation

    Roast Potatoes

    Preheat your oven to 425°F (220°C). In a large bowl, toss the diced potatoes with olive oil, chopped shallots, smoked paprika, and salt. Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy, tossing halfway through the cooking time.

    Finish Patatas Bravas

    Once roasted, remove from the oven and sprinkle with fresh parsley before serving.

Sherry Pesto Aioli Preparation

    Make the Aioli

    In a blender or food processor, combine the mayonnaise, fresh basil leaves, sherry vinegar, minced garlic, salt, and black pepper. Blend until smooth. Taste and adjust seasoning if needed.

Basil Roasted Tomatoes Preparation

    Roast the Tomatoes

    In a bowl, toss the cherry tomatoes with olive oil, torn basil leaves, salt, and black pepper. Spread them on a baking sheet and roast in the oven at 425°F (220°C) for about 15-20 minutes, or until they are soft and blistered.
