Cooking the Rice

Prepare the Rice
Rinse the Thai jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2.5 cups of water, bring to a boil, then reduce heat to low, cover, and cook for about 15-20 minutes until the rice is tender and water is absorbed. Remove from heat and let it stand covered for an additional 10 minutes.

Prepare the Vegetables
While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the diced carrot and bell pepper, and stir-fry for about 3-4 minutes until they start to soften.

Add Jalapenos and Kimchi
Chop the jalapenos (remove seeds for less heat, if desired) and add them to the skillet along with the Asian pear kimchi. Stir-fry for another 2-3 minutes until everything is combined and heated through.

Combine Rice and Seasoning
Add the cooked rice to the skillet, followed by the soy sauce, sesame oil, salt, black pepper, and chili flakes. Stir everything together until well combined and heated through. Adjust seasoning if necessary.

Garnish with chopped green onions before serving. Serve hot.
