Crostini

Prepare the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

Garlic Infusion
In a small bowl, mix olive oil and minced garlic. Brush the mixture onto both sides of the baguette slices.

Bake the Crostini
Place the baguette slices on a baking sheet. Sprinkle with salt and bake for 10-12 minutes or until golden brown and crispy.
Whipped Ricotta

Blend the Ricotta
In a mixing bowl, combine the ricotta cheese, fresh basil, fresh parsley, lemon zest, and salt.

Whip Until Smooth
Using a hand mixer or food processor, whip the ingredients together until smooth and creamy. Set aside.
Tomato Topping

Prepare the Tomatoes
Halve the heirloom cherry tomatoes and place them in a bowl.

Season the Tomatoes
Add olive oil, balsamic glaze, salt, and black pepper to the tomatoes. Toss gently to combine.
Crispy Basil

Fry the Basil
In a small pan, heat olive oil over medium heat. Add the fresh basil leaves and fry for about 30 seconds until crispy. Remove and drain on paper towels.
Assembly

Assemble the Bruschetta
Spread a generous layer of whipped ricotta on each crostini. Top with the marinated heirloom tomatoes and finish with crispy basil leaves.

Drizzle with additional balsamic glaze if desired, and serve immediately.
