Stuffing Preparation

Prepare the Sourdough
Cut the sourdough bread into small cubes and place them in a large mixing bowl.

Combine Ingredients
Add the cooked celery and onion to the sourdough cubes. Pour in the chicken or vegetable broth, and add parsley, sage, thyme, salt, and black pepper. Mix well until the bread absorbs the liquid.

Cool the Mixture
Allow the stuffing mixture to cool for about 15 minutes before handling.
Bacon Wrapping

Wrap the Stuffing
Preheat the oven to 400°F (200°C). Take a tablespoon of the stuffing mixture and form it into a small ball. Wrap each ball with a slice of pecanwood bacon, securing it with a toothpick if necessary.

Arrange on Baking Sheet
Place the wrapped stuffing bites on a baking sheet lined with parchment paper, ensuring they are spaced apart.
Baking and Aioli Preparation

Bake the Bites
Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the stuffing is heated through.

While the bites are baking, prepare the candied ginger aioli by whisking together mayonnaise, minced candied ginger, lemon juice, and garlic in a small bowl until well combined.
