Preparing the Poblano Peppers

Roasting the Peppers
Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven for about 20-25 minutes, turning occasionally, until the skin is charred and blistered.

Cooling and Peeling
Remove the roasted peppers from the oven and place them in a bowl. Cover with plastic wrap and let them steam for about 10 minutes. Once cool enough to handle, peel off the charred skin, remove the seeds, and chop the peppers.
Making the Sauce

Combining Ingredients
In a large mixing bowl, combine the mayonnaise, sour cream, and buttermilk. Whisk together until smooth and well combined.

Adding Seasonings
Add the roasted and chopped poblano peppers, garlic powder, onion powder, dried dill, salt, black pepper, and lime juice to the mixture. Stir until all ingredients are evenly mixed.

Adjusting Consistency
If the sauce is too thick, add a little more buttermilk until the desired consistency is reached.

Chilling
Cover the bowl with plastic wrap and refrigerate the sauce for at least 30 minutes before serving to allow the flavors to meld together.
