Preparing the Cauliflower

Roasting the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into florets and spread them on a baking sheet. Drizzle with olive oil, season with salt, and toss to coat evenly. Roast for 25-30 minutes until golden and tender.

In a small bowl, combine sour cream, cumin, and olive oil. Whisk until smooth. Season with salt to taste.

Prepare the Walnuts
In a skillet over medium heat, combine walnuts, brown sugar, sesame oil, and a pinch of salt. Stir frequently until the sugar is melted and the walnuts are coated, about 5-7 minutes. Remove from heat and let cool.
