Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them rest at room temperature for about 30 minutes. This ensures even cooking.

Season the Steak
Generously season both sides of each steak with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Sear the Steak
Add the seasoned steaks to the pan. Sear for 4-5 minutes on one side until a crust forms.

Flip and Add Aromatics
Flip the steaks and add the garlic cloves and rosemary to the pan. Continue cooking for another 4-5 minutes, basting the steaks with the oil and juices.

Check for Doneness
Use a meat thermometer to check for doneness. For medium-rare, the internal temperature should be 130°F (54°C).

Rest the Steak
Remove the steaks from the pan and let them rest for 5-10 minutes before slicing.

While the potatoes are boiling, peel and mince the garlic cloves.

Taste and adjust the seasoning with more salt and pepper if needed.
