Pudding Base Preparation

Combine Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until just simmering, stirring occasionally.

Mix Sugars and Cornstarch
In a separate bowl, whisk together the brown sugar, granulated sugar, cornstarch, and a pinch of salt until well combined.

Thicken the Pudding
Continue to cook the mixture over medium heat, whisking constantly until it thickens and starts to bubble. Remove from heat and stir in the butter and vanilla extract.

Cool the Pudding
Pour the pudding into individual serving dishes or one large dish. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 2 hours to set.
Chantilly Whipped Cream Preparation

Beat Cream
In a medium bowl, add the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium-high speed until soft peaks form.

Refrigerate the whipped cream until ready to serve.
Toasted Oat-Amaranth Streusel Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Combine Ingredients
In a mixing bowl, combine rolled oats, amaranth, brown sugar, and a pinch of salt.

In a small saucepan, melt the butter over low heat. Pour it over the oat mixture and stir until evenly coated.

Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for 10-15 minutes or until golden brown, stirring occasionally.

Once toasted, remove from the oven and let cool completely before using.
