For the Carnitas

Sear the Beef
In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Season the beef chuck roast with salt and black pepper, then sear it in the hot oil until browned on all sides, about 4-5 minutes per side.

Add Aromatics
Add the chopped onion, crushed garlic cloves, bay leaves, cumin, oregano, and water to the pot. Bring to a boil, then reduce to a simmer.

Cook the Beef
Cover and simmer the beef for about 3 hours, or until it is fork-tender. Check occasionally and add more water if necessary.

For the Red Pickled Cabbage Salsa

Prepare the Pickling Liquid
In a bowl, whisk together apple cider vinegar, sugar, and salt until the sugar is dissolved.

Mix the Vegetables
In a large bowl, combine the sliced red cabbage, red onion, and shredded carrot.

Pickle the Vegetables
Pour the pickling liquid over the cabbage mixture, tossing to coat. Let it sit for at least 30 minutes or refrigerate for up to 2 hours.

Combine Ingredients
In a small bowl, mix together mayonnaise, sriracha, smoked paprika, and lime juice until well combined. Adjust seasoning with more sriracha if desired.
For the Tacos

Prepare Tortillas
Heat the corn tortillas in a dry skillet over medium heat until warm and pliable, about 30 seconds per side.

Assemble Tacos
Divide the shredded beef among the tortillas. Top with shredded cheese and pickled cabbage salsa. Drizzle with smoky sriracha mayo and garnish with chopped cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top.
