Preparation of Rice

Cook the Sushi Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook according to package instructions, typically with 2 cups of water. Once cooked, fluff with a fork and set aside.

Chop the Vegetables and Meats
Thinly slice the Chinese sausage into bite-sized pieces. Finely chop the fresh ginger. Slice the scallions, keeping the green and white parts separate.

Prepare the Duck Liver
Clean the duck liver by removing any membranes or veins. Cut into small pieces.
Cooking Process

Scramble the Eggs
In a large skillet or wok, heat a bit of oil over medium heat. Crack the 2 eggs into a bowl, whisk, and pour into the skillet. Cook while stirring gently until eggs are just set, then remove from the skillet and set aside.

Cook the Meats
In the same skillet, add a bit more oil and add the sliced Chinese sausage. Fry until slightly crispy. Then add the duck liver pieces and cook for about 2-3 minutes until browned and cooked through.

Add the chopped ginger and the white parts of the scallions to the skillet. Stir-fry for 1-2 minutes until fragrant.

Combine Ingredients
Add the cooked sushi rice to the skillet, breaking up any clumps. Pour in the soy sauce, salt, black pepper, and sesame oil. Stir well to combine all ingredients.

Finish with Eggs and Green Scallions
Fold the scrambled eggs back into the fried rice and sprinkle with the green parts of the scallions. Stir to combine and heat through for another 2-3 minutes.
