Preparation of the Mimosa

    Prepare the Glasses

    If desired, rim the glasses with sugar. To do this, rub the rim of each glass with a slice of orange, then dip it into a plate of sugar to coat the rim.

    Juicing the Oranges

    Juice fresh oranges until you have 2 cups of freshly squeezed orange juice. Strain it through a fine mesh sieve to remove pulp if you prefer a smoother texture.

    Mixing the Mimosa

    In a mixing pitcher, combine the freshly squeezed orange juice and Champagne or sparkling wine, gently stirring to combine. Be careful not to agitate too much to preserve the bubbles.

    Serving

    Pour the mimosa mixture into the prepared glasses, filling each about two-thirds full. Garnish each drink with a slice of orange and a few fresh mint leaves.
