Preparing the Filling

    In a mixing bowl, combine the cream cheese, finely chopped scallions, and minced jalapeño pepper. Use a hand mixer or a spatula to whip until smooth and creamy.

    Gently fold in the fresh crab meat into the whipped cream cheese mixture until fully combined. Ensure not to break the crab meat pieces too much.

Assembling Rangoons

    Take a wonton wrapper and place it on a clean surface. Spoon about 1 tablespoon of the crab filling into the center of the wrapper.

    Moisten the edges of the wonton wrapper with a little water. Fold the wrapper in half to create a triangle and press the edges to seal. Then, bring the bottom corners of the triangle together to form a pouch and press to seal tightly.

    Repeat the process with the remaining wonton wrappers and filling.

Making Chili Honey

    In a small bowl, combine honey and chili flakes. Mix well and set aside to let the flavors meld.

Frying Rangoons

    In a deep skillet or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Carefully add 4 rangoons to the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes on each side.

    Use a slotted spoon to remove the rangoons from the oil and transfer them to a plate lined with paper towels to drain any excess oil.
