Method
Grilling the Salmon
- 1
Prepare the Marinade
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper. This will be the marinade for the salmon.
- 2
Marinate the Salmon
Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are evenly coated. Cover and refrigerate for at least 30 minutes.
- 3
Preheat the Grill
Preheat your grill to medium-high heat, around 375°F (190°C).
- 4
Preparing the Vegetables
- 5
Prepare the Vegetables
Wash and cut the broccoli, carrots, bell pepper, and zucchini into bite-sized pieces.
- 6
Steam the Vegetables
In a steamer basket over boiling water, steam the vegetables for about 5-7 minutes until they are tender but still bright in color. Season with salt and black pepper to taste.
Cooking the Rice
- 7
Rinse the Rice
Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.
- 8
Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed rice and season with salt to taste. Cover, reduce the heat to low, and let it simmer for about 15-20 minutes, or until the water is absorbed and the rice is tender.
