Prepare the Ginger
Peel the fresh ginger root and chop it into small pieces. This will help release its flavor during the brewing process.

In a pot, heat 500 ml of water and dissolve the granulated sugar in it, stirring until fully dissolved.

Add the chopped ginger to the pot and allow it to simmer for about 10 minutes. Remove from heat and let it cool slightly.

In a large bowl or fermentation vessel, strain the ginger infusion to remove the pieces. Add the remaining water (500 ml) and lemon juice, mixing well.

In a small bowl, combine the active dry yeast with 1 tablespoon of warm water and let it sit for about 5 minutes until it becomes frothy.

Stir the activated yeast into the ginger mixture along with the cream of tartar. Mix thoroughly to ensure that the yeast is evenly distributed.

Cover the fermentation vessel with a cloth and secure it with a rubber band. Leave it at room temperature (around 21-24°C) for 48 hours. You should see bubbles forming during this time.
