Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder or flour.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  3. 3

    Whisk Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, eggs, and egg yolks until thick and pale, about 3-4 minutes. Stir in the vanilla extract.

  4. 4

    Combine Mixtures

Gradually fold the melted chocolate mixture into the egg mixture until well combined.

  5. 5

    Add Flour and Salt

Gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.

  6. 6

    Pour into Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  2. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes. Be careful as they will be hot.

  3. 9

    Serve

Carefully run a knife around the edges of the cakes to loosen them. Invert each ramekin onto a plate and gently tap to release the cake. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
