    Prepare the Vegetables

    Peel and chop the potatoes into bite-sized cubes. Cube the pumpkin (if using fresh) and set aside. Chop the onion and mince the garlic.

    Dice the Pineapple

    If using fresh pineapple, peel and dice it into small pieces. Set aside.

    Sauté the Base

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, cooking until translucent, about 5 minutes.

    Add the Curry Paste

    Stir in the green curry paste and cook for another 2 minutes, allowing the flavors to meld together.

    Combine Vegetables and Liquids

    Add the chopped potatoes and pumpkin to the pot. Pour in the vegetable broth and coconut milk. Stir well to combine.

    Simmer the Soup

    Bring the mixture to a gentle boil, then reduce heat to low. Cover and let simmer for about 20-25 minutes, or until the potatoes and pumpkin are tender.

    Add Pineapple and Herbs

    Once the vegetables are tender, add the diced pineapple, chopped cilantro, and basil to the pot. Stir and cook for an additional 5 minutes to warm through.
